Despite having been a vegetarian since 2007 and mostly plant-based since 2017, it’s only been in the last 3 years that I truly fell in love with tofu. Now I eat it several times every single week.

Below I describe three possible stages to making delicious tofu. Sometimes I do all three, but even doing just the first step will elevate your tofu experience no end. This post will cover some basics:

  1. Draw out some of the moisture, which improves the texture and allows the tofu to absorb the flavours you add in the next step.

  2. Marinate the tofu. Not always a needed, especially if the tofu is going to be added into a curry or similar

  3. Cooking the tofu. If you’re planning on pan-frying or roasting the tofu - some tips below.
